INGREDIENTS:
500g minced Venison
12 slices of streaky Bacon
1 Egg
1 Tbsp Cajun Seasoning
½ Cup Breadcrumbs
2 Tbsp Worcestershire Sauce
1 Tbsp Yellow Mustard
Sliced cheese (12 slices)
Burger Buns
Sliced tomato, lettuce, sliced onion
Ketchup or your favourite Burger Sauce
DIRECTIONS:
Combine venison mince, egg, Cajun seasoning, bread crumbs, Worcestershire sauce, and mustard
Shape into patties
Wrap 2 slices of bacon around each burger pattie
Please on a smoker rack for 1 – 1½ hours at 120C (250F) depending on whether you like your burger Medium or Well Done. Pacific Blend, Hickory or Mesquite Bisquettes work well with venison.
Place 2 cheese slices on top of each burger pattie and return to the smoker for a further 30 minutes
Grill the burger buns (spread on some butter if you’d like)
Build your burger and enjoy!
